- 4 c. diced cooked chicken
- 2 pkg. frozen chopped broccoli, cooked and drained
- 1 c. uncooked rice
- 2 1/2 c. chicken broth
- 2 cans cream of chicken soup
- 3/4 c. real mayonnaise
- 2 tsp. lemon juice
- 2 c. grated Cheddar cheese or small jar Cheez Whiz
- 1 can water chestnuts (if desired)
- 1/2 tsp. curry powder (if desired)
Method
- Prepare rice with broth until tender and broth is gone.
- Layer in greased 9 x 13-inch pan, rice, 1/2 chicken, broccoli and 1/2 chicken.
- Combine soup, mayonnaise, cheese and lemon juice to make sauce.
- Pour over layers.
- Top with 2 cups cornflake crumbs, mixed with 1/2 stick margarine, melted.
- Bake at 350° for 45 to 60 minutes.
