Ingredients

  • 4 c. diced cooked chicken
  • 2 pkg. frozen chopped broccoli, cooked and drained
  • 1 c. uncooked rice
  • 2 1/2 c. chicken broth
  • 2 cans cream of chicken soup
  • 3/4 c. real mayonnaise
  • 2 tsp. lemon juice
  • 2 c. grated Cheddar cheese or small jar Cheez Whiz
  • 1 can water chestnuts (if desired)
  • 1/2 tsp. curry powder (if desired)

Method

  • Prepare rice with broth until tender and broth is gone.
  • Layer in greased 9 x 13-inch pan, rice, 1/2 chicken, broccoli and 1/2 chicken.
  • Combine soup, mayonnaise, cheese and lemon juice to make sauce.
  • Pour over layers.
  • Top with 2 cups cornflake crumbs, mixed with 1/2 stick margarine, melted.
  • Bake at 350° for 45 to 60 minutes.
