Ingredients

  • 3/4 c. grain rice or 4.5 oz. pkg. herb-flavored rice mix
  • 2 whole skinned and boned chicken breasts
  • 1 tsp. lemon pepper seasoning
  • 1/4 tsp. onion powder
  • 2 Tbsp. margarine or butter
  • 2 tsp. flour
  • 1 Tbsp. Dijon-style mustard

Method

  • Cook rice or herb-flavored rice mix according to package directions.
  • Meanwhile rinse chicken; pat dry.
  • Sprinkle both sides of chicken with lemon pepper and onion powder.
  • In a skillet cook chicken in margarine or butter over medium heat for 8 to 10 minutes or until no longer pink, turning once.
  • Transfer to a platter.
  • Keep warm.
