Ingredients

  • 3 lb. fryer
  • 1 medium onion, chopped
  • 1 small bell pepper, chopped
  • 1 stick margarine
  • 1 lb. cheese
  • 1 can Ro-Tel tomatoes, drained and mashed
  • 1 (8 oz.) can mushrooms, drained
  • 1 box small shells/macaroni

Method

  • Boil fryer seasoned with salt and pepper.
  • Remove from bone. Reserve 1 1/2 quarts broth and boil shells in broth.
  • Do not drain. Saute pepper and onions in margarine.
  • To the shells, add mushrooms and cheese (cut in small pieces).
  • Add tomatoes, peppers and onions.
  • Stir lightly and put in large greased casserole dish. Bake 40 minutes at 350°.
