Ingredients

  • 1 small onion, chopped
  • 1/4 c. water
  • 1 can tomatoes
  • 1/2 c. tomato puree or sauce
  • 1/2 tsp. garlic powder
  • 1 tsp. oregano
  • 1/8 tsp. pepper
  • 4 chicken pieces

Method

  • Boil onion, water, tomatoes, tomato puree or sauce, garlic powder, oregano, and pepper in saucepan for 10 minutes to simmer for flavors.
  • Place chicken in frying pan.
  • Pour sauce over chicken.
  • Cook, covered, over low heat until chicken is tender, about 45 minutes.
  • Uncover and cook 15 minutes more to thicken tomato sauce.
  • Makes 4 servings.
