- 4 lg. boneless chicken breast halves (or 8 small)
- 1/2 tsp. salt (optional)
- 2 Tbsp. olive/salad oil
- 3 Tbsp. chopped chives (or green onions)
- 2 tsp. dijon mustard
- 1/4 - 1/2 tsp. black pepper
- 3 Tbsp. chopped parsley
- 2 Tbsp. butter or margarine
- 2 Tbsp. brandy or cognac (optional)
- juice of 1/2 lemon or lime
- 1/4 c. chicken broth
Method
- Preparation:
- (Prep. time - 20 min.)
- Place chicken breast halves between sheets of waxed paper/plastic wrap.
- Pound slightly with mallet.
- Sprinkle with pepper and salt (optional).
