Ingredients

  • 4 lg. boneless chicken breast halves (or 8 small)
  • 1/2 tsp. salt (optional)
  • 2 Tbsp. olive/salad oil
  • 3 Tbsp. chopped chives (or green onions)
  • 2 tsp. dijon mustard
  • 1/4 - 1/2 tsp. black pepper
  • 3 Tbsp. chopped parsley
  • 2 Tbsp. butter or margarine
  • 2 Tbsp. brandy or cognac (optional)
  • juice of 1/2 lemon or lime
  • 1/4 c. chicken broth

Method

  • Preparation:
  • (Prep. time - 20 min.)
  • Place chicken breast halves between sheets of waxed paper/plastic wrap.
  • Pound slightly with mallet.
  • Sprinkle with pepper and salt (optional).
