Ingredients

  • 2 lb boneless skinless chicken breast
  • 1/2 cup low sodium chicken broth
  • 2 tbsp reduced sodium soy sauce
  • 2 tsp cornstarch
  • 2 tbsp water
  • 1 tbsp olive oil, extra virgin
  • 6 clove garlic chopped
  • 3 tbsp fresh lemon juice
  • 1 salt and pepper to taste

Method

  • Cut chicken into one inch cubes and salt.
  • One bowl combine chicken broth and soy sauce.
  • Another bowl combine cornstarch and water.
  • Heat skillet over medium heat add 1 tsp.
  • Oil Cook asparagus 3-4 minutes then add garlic, Cook until golden brown.
  • Remove and set aside.
  • Cook chicken until brown and cooked through, remove and set aside.
  • Add soy sauce mixture and bring to a boil, add lemon juice and cornstarch mixture, mix well.
  • Bring to a simmer and add chicken and asparagus mix well and serve.
