Ingredients
- 2 lb boneless skinless chicken breast
- 1/2 cup low sodium chicken broth
- 2 tbsp reduced sodium soy sauce
- 2 tsp cornstarch
- 2 tbsp water
- 1 tbsp olive oil, extra virgin
- 6 clove garlic chopped
- 3 tbsp fresh lemon juice
- 1 salt and pepper to taste
Method
- Cut chicken into one inch cubes and salt.
- One bowl combine chicken broth and soy sauce.
- Another bowl combine cornstarch and water.
- Heat skillet over medium heat add 1 tsp.
- Oil Cook asparagus 3-4 minutes then add garlic, Cook until golden brown.
- Remove and set aside.
- Cook chicken until brown and cooked through, remove and set aside.
- Add soy sauce mixture and bring to a boil, add lemon juice and cornstarch mixture, mix well.
- Bring to a simmer and add chicken and asparagus mix well and serve.
