Ingredients

  • 200 g chicken
  • 200 g red turnips
  • 1 onion
  • 200 g sweet potatoes
  • 1 can tomatoes
  • 1 pinch salt and pepper
  • 2 tsp garlic powder
  • 2 tsp dried herbs
  • 1 Tbsp powdered cheese

Method

  • Slice the onions.
  • Cut up the chicken (remove any skin but keep it for later), the red turnips and the sweet potato into approx 2 cm cubes.
  • Heat 2 tsp olive oil in a pot.
  • Put in all the chopped vegetables and chicken and stir fry on medium heat for about 4-6 mins.
  • Add seasoning: salt, pepper, garlic powder and herbs.
  • Next, add 2 to 2.5 cups of water.
  • If there was chicken skin from step 1, include it for making broth and added flavour.
  • Simmer the soup for about 15 min on medium to low heat with the lid on.
  • Add the can of tomatoes to the pot and mix in gently.
  • Taste and season as needed.
  • Before serving, take out the chicken skin.
  • Delicious served in a soup mug with cheese sprinkled on top.
