Ingredients
- 1 Tbsp. oil (Heart Beat)
- 2/3 c. sliced green onion
- 1 (14 1/2 oz.) can stewed, sliced or whole tomatoes
- 1 (0.6 oz.) envelope dry Italian dressing
- 1 green pepper, cleaned and sliced
- 2 whole boneless chicken breasts (1 lb.)
- 1 tsp. dried basil
Method
- Heat oil in large skillet over medium-high heat.
- Stir in peppers and green onion.
- Add chicken and cook until browned.
- Add tomatoes.
- Sprinkle dressing mix and basil over top.
- Reduce heat to low.
- Cover and simmer for about 25 to 30 minutes until chicken is done.
- Yield:
- 4 servings.
- Ooh so good over rice or noodles!
