Ingredients

  • 1 Tbsp. oil (Heart Beat)
  • 2/3 c. sliced green onion
  • 1 (14 1/2 oz.) can stewed, sliced or whole tomatoes
  • 1 (0.6 oz.) envelope dry Italian dressing
  • 1 green pepper, cleaned and sliced
  • 2 whole boneless chicken breasts (1 lb.)
  • 1 tsp. dried basil

Method

  • Heat oil in large skillet over medium-high heat.
  • Stir in peppers and green onion.
  • Add chicken and cook until browned.
  • Add tomatoes.
  • Sprinkle dressing mix and basil over top.
  • Reduce heat to low.
  • Cover and simmer for about 25 to 30 minutes until chicken is done.
  • Yield:
  • 4 servings.
  • Ooh so good over rice or noodles!
