Ingredients

  • 1 cup diced cooked chicken meat or turkey breast
  • 1 cup cooked or canned chickpeas
  • 1 tsp. coriander
  • 1/2 tsp. cumin
  • 2 Tbsp. olive oil
  • 1 tbsp. lemon juice or vinegar
  • 1 clove garlic, minced
  • 1/2 tsp. hot pepper sauce or few dashes of cayenne
  • 1 cup nonfat or low fat plain yogurt
  • salt and pepper to taste
  • 4 pita breads
  • Stuffings, such as tomatoes, lettuce, alfalfa sprouts, etc.

Method

  • Toast the pitas.
  • In a mixing bowl, toss all ingredients (except pitas and stuffings, or course), until everything is well combined.
  • Stuff pitas.
  • Serve immediately.
