- 1 cup diced cooked chicken meat or turkey breast
- 1 cup cooked or canned chickpeas
- 1 tsp. coriander
- 1/2 tsp. cumin
- 2 Tbsp. olive oil
- 1 tbsp. lemon juice or vinegar
- 1 clove garlic, minced
- 1/2 tsp. hot pepper sauce or few dashes of cayenne
- 1 cup nonfat or low fat plain yogurt
- salt and pepper to taste
- 4 pita breads
- Stuffings, such as tomatoes, lettuce, alfalfa sprouts, etc.
Method
- Toast the pitas.
- In a mixing bowl, toss all ingredients (except pitas and stuffings, or course), until everything is well combined.
- Stuff pitas.
- Serve immediately.
