- 1 chicken
- 1 pkg. frozen broccoli spears
- 1 can cream of chicken soup
- 1/2 c. mayonnaise
- 1 tsp. lemon juice
- 1 tsp. curry powder
- 1/2 to 1 c. grated Cheddar cheese
- buttered bread crumbs
Method
- Cook fryer in boiling water with 1/2 tablespoon dry onion, stalk celery and 2 teaspoons of salt. Not too much water.
- (Use rich broth to cook rice.) Cook chicken until tender.
- Let cool until skin can be removed and cut in bite-size pieces. Steam broccoli until just tender.
- Drain and place in bottom of casserole.
- Add chicken.
