Ingredients

  • 2 c. chicken, cooked and cut in chunks
  • 1 c. celery, cooked 1 minute in microwave
  • 1 c. cooked rice
  • 1 can cream of chicken soup
  • 2 eggs, beaten
  • 1 small onion, chopped
  • 1/2 c. mayonnaise
  • 1/4 c. sour cream
  • 1/4 c. bell pepper
  • 1/4 c. pimento
  • 1 small can sliced water chestnuts
  • 1/2 c. sliced almonds

Method

  • Line a 3-quart casserole dish with 3 cups of cooked broccoli. Mix remaining ingredients and spread on top of broccoli.
  • Top with 1 cup crushed corn flakes and drizzle with 1/2 cup melted butter. Bake at 350° for 50 minutes in preheated oven.
