Ingredients
- 2 (16 oz. each) jars mild cherry peppers, drained
- 2 oz. thinly sliced Proscuitto
- 1 (8 oz.) can pineapple chunks, drained
Method
- Slice off and discard stems from the cherry peppers.
- With a small spoon, scoop out and discard seeds.
- Cut the Prosciutto into 1 to 2-inch squares.
- Cut each pineapple chunk in half and wrap in Prosciutto.
- Stuff into a pepper.
- Serves 12.
