Ingredients

  • 1/3 c. shortening
  • 1/2 c. sugar
  • 1 egg, well beaten
  • 1 tsp. grated lemon rind
  • 1 tsp. vanilla
  • 1 1/2 Tbsp. maraschino cherry juice
  • 1 c. flour
  • 1/4 tsp. salt
  • 1/4 tsp. soda
  • 1/2 tsp. baking powder
  • 1/2 c. chopped nuts
  • 1/2 c. chopped raisins
  • 1 c. crushed corn flakes
  • 24 maraschino cherries

Method

  • Cream shortening and sugar thoroughly; add egg, lemon rind, vanilla and cherry juice.
  • Beat well.
  • Add sifted dry ingredients, then raisins and nuts.
  • Drop from teaspoon into crushed cereal, roll into balls, coat well and top with maraschino cherries.
  • Bake on greased cookie sheets in hot oven (400°) about 10 minutes or until delicately browned.
  • Recipe makes two dozen.
