Ingredients

  • 1 (10 oz.) pkg. frozen chopped spinach
  • 1/4 c. water
  • 2 Tbsp. butter or margarine
  • 2 anchovies, chopped
  • salt
  • pepper
  • 1/2 c. chopped onion
  • 1/2 c. sliced fresh mushrooms
  • 1 tsp. Dijon mustard
  • 1/4 c. red wine
  • 1/4 c. chicken stock
  • 2 pork loin chops, with pocket (about 3/4-inch thick)
  • salt
  • flour
  • 1 Tbsp. butter or margarine

Method

  • In an all-purpose casserole, combine spinach and water; cover. Place on Micro-Go-Round in microwave oven.
  • Microwave at High for 5 to 6 minutes, breaking up spinach frequently.
  • Drain spinach; remove from casserole.
  • Place 2 tablespoons butter in casserole. Microwave uncovered at High for 30 seconds, or until butter melts. Add anchovies; microwave at High for 1 minute.
  • Stir in spinach, salt and pepper.
  • Microwave at High for 2 or 2 1/2 minutes or until heated through.
  • Remove spinach mixture from casserole; set aside.
