Ingredients
- 1 lb. lean ground beef
- 1/2 yellow onion, chopped
- 1/2 tsp. garlic powder
- 1 lb. fresh zucchini
- 6 oz. grated Longhorn cheese
- 1 (10 1/4 oz.) can mushroom soup
Method
- Brown meat with onion and garlic powder.
- Drain and set aside. Cut zucchini in 1/4-inch slices (do not peel) and cook for 5 minutes in water.
- Drain.
- In a greased casserole dish, layer in 1/2 of meat, 1/2 of the zucchini and 1/2 of cheese.
- Repeat layers.
- Mix soup with 1/4 cup water and pour over top.
- Bake at 350° for 40 minutes, uncovered.
