Ingredients

  • 1 lb. lean ground beef
  • 1/2 yellow onion, chopped
  • 1/2 tsp. garlic powder
  • 1 lb. fresh zucchini
  • 6 oz. grated Longhorn cheese
  • 1 (10 1/4 oz.) can mushroom soup

Method

  • Brown meat with onion and garlic powder.
  • Drain and set aside. Cut zucchini in 1/4-inch slices (do not peel) and cook for 5 minutes in water.
  • Drain.
  • In a greased casserole dish, layer in 1/2 of meat, 1/2 of the zucchini and 1/2 of cheese.
  • Repeat layers.
  • Mix soup with 1/4 cup water and pour over top.
  • Bake at 350° for 40 minutes, uncovered.
