Ingredients
- 3 tablespoons butter
- 1 12 cups chopped celery
- 1 cup chopped carrot
- 12 cup chopped onion
- 4 cups water
- 2 chicken bouillon cubes
- 1 12 cups instant mashed potatoes
- 2 cups milk
- 2 cups shredded medium cheddar
Method
- In large pan melt butter, add celery, carrots, and onion.
- Cook on medium heat 10 minutes.
- Add water and bouillon.
- Bring to a boil.
- Cover and simmer 20 minutes.
- Stir in instant potato.
- Slowly add milk and cheese, stirring constantly until cheese is melted.
