Ingredients

  • 3 tablespoons butter
  • 1 12 cups chopped celery
  • 1 cup chopped carrot
  • 12 cup chopped onion
  • 4 cups water
  • 2 chicken bouillon cubes
  • 1 12 cups instant mashed potatoes
  • 2 cups milk
  • 2 cups shredded medium cheddar

Method

  • In large pan melt butter, add celery, carrots, and onion.
  • Cook on medium heat 10 minutes.
  • Add water and bouillon.
  • Bring to a boil.
  • Cover and simmer 20 minutes.
  • Stir in instant potato.
  • Slowly add milk and cheese, stirring constantly until cheese is melted.
