Ingredients

  • 6 eggs
  • 1/2 c. all-purpose flour
  • 1 tsp. baking powder
  • 1/8 tsp. salt
  • 1 c. milk
  • 8 oz. cottage cheese
  • 1 (3 oz.) pkg. cream cheese, cubed
  • 2 Tbsp. butter
  • 1 lb. Monterey Jack cheese, cubed

Method

  • In a large bowl, beat the eggs.
  • Add flour, baking powder, salt and milk, beating until smooth.
  • Beat in the cottage cheese and stir in the cubed cream cheese and cubed Monterey Jack cheese. Pour into a well greased and floured 2-quart baking dish.
  • Dot with butter.
  • Bake in a 350° oven for 45 minutes.
  • Serves 6.
