- 4 c. chicken broth
- 1 1/2 c. diced potatoes
- 1 c. diced celery
- 1 c. diced carrots
- 1/2 c. diced onion
- 1/4 c. butter or oleo
- 1/3 c. all-purpose flour
- 3 c. milk
- 1 Tbsp. soy sauce
- 1 (8 oz.) loaf processed cheese, cubed
- 2 c. chopped, cooked chicken
Method
- Combine first 5 ingredients in a large saucepan; cover and cook until tender.
- Melt butter in Dutch oven or large pot over low heat; add flour.
- Stir until smooth.
- Cook 1 minute, stirring constantly.
- Stir in milk gradually and cook until thick and bubbly.
- Gradually stir in vegetable mixture, soy sauce, cheese and chicken.
- Cook until cheese melts and mixture is well heated.
