- 12 cup diced onion
- 1 garlic clove, minced
- 2 tablespoons vegetable oil
- 2 cups shredded sharp cheddar cheese
- 14 cup dry breadcrumbs
- 2 tablespoons minced fresh parsley
- 14 teaspoon salt
- 14 teaspoon pepper
- 14 teaspoon dried oregano
- 18 teaspoon hot sauce (or to taste)
- 4 eggs, beaten
- 1 lb fresh asparagus, trimmed and cut into 1/2-inch pieces (steamed until crisp-tender)
Method
- In a skillet, saute onion and garlic in oil until tender.
- Combine cheese, bread crumbs, parsley, salt, pepper, oregano, and hot sauce; stir in onion mixture and eggs.
- Drain steamed asparagus well; stir into cheese mixture.
- Pour mixture into a greased 9-inch square baking pan.
- Bake at 350 for 30 minutes or until a knife inserted near the center comes out clean.
- Let stand for 15 minutes.
- Cut into small squares; serve warm.
