Ingredients

  • 12 cup diced onion
  • 1 garlic clove, minced
  • 2 tablespoons vegetable oil
  • 2 cups shredded sharp cheddar cheese
  • 14 cup dry breadcrumbs
  • 2 tablespoons minced fresh parsley
  • 14 teaspoon salt
  • 14 teaspoon pepper
  • 14 teaspoon dried oregano
  • 18 teaspoon hot sauce (or to taste)
  • 4 eggs, beaten
  • 1 lb fresh asparagus, trimmed and cut into 1/2-inch pieces (steamed until crisp-tender)

Method

  • In a skillet, saute onion and garlic in oil until tender.
  • Combine cheese, bread crumbs, parsley, salt, pepper, oregano, and hot sauce; stir in onion mixture and eggs.
  • Drain steamed asparagus well; stir into cheese mixture.
  • Pour mixture into a greased 9-inch square baking pan.
  • Bake at 350 for 30 minutes or until a knife inserted near the center comes out clean.
  • Let stand for 15 minutes.
  • Cut into small squares; serve warm.
