Ingredients
- 250 grams phillidelphia cream cheese
- 400 ml condensed milk
- 2 tbsp lemon rind
- 1/3 cup fresh lemon juice
- 250 grams granita biscuits
- 125 grams butter
- 600 ml thickened cream
Method
- At room temp blend the cheese til creamy
- Add condensed milk, lemon juice and rind.
- Blend till smooth, refrigerate.
- Crush the biscuits and melt the butter combine til well mixed.
- Grease a round oven tray and line with baking paper.
- Pour biscuit mixture onto tray and using a flat bottomed glass press the mixture evenly around the tray.
- Refrigerate.
- Having refrigerated ingredients for 1 to 4hrs start layering your shot glasses with cheescake filling and cream.
- Next chop the biscuit slab into shards for decorating...Enjoy!
