- 24 graham Crackers (Crushed)(Save some for top)
- 1/2 c. Melted Butter
- 2 (8 oz.) Philadelphia Cream Cheese
- 2 Eggs (Separated)
- 1/2 c. Sugar
- 1 tsp. Vanilla
- 1/2 pt. Sour Cream (Whipped)
- 4 Tbsp. Sugar
- 1 tsp. Vanilla
- 1 Small Jar Maraschino Cherries (Drain liquid into bowl and add enough water to make 2 c. liquid).
- 1 c. Margarine
- 2 c. Powdered Sugar
- 2 c. Golden Raisins
- 2 c. Gumdrops (Cut up)(NO BLACK)(Gumdrops cut easy with scissors)
- 1 c. Walnuts or Pecans (Chopped)
- 3 1/2 c. Flour
- 1 tsp each Baking Soda, Cloves, Allspice, Cinnamon, Salt
Method
- 1. Pour cherry liquid into heavy suacepan. Add margarine, powdered sugar, and raisins. Stir to dissolve sugar.
- Bring mixture to a boil for 5 minutes.
- 2. Remove from heat and pour into large mixing bowl. Let
- mix cool completely.
- 3. Sift flour and spices. Mix 1/2 c. flour and gumdrops.
- Add dry ingredients to raisin mix. Fold in gumdrops,
- drained cherries, and nuts. Blend well.
- 4. Spray (2) 9 x 5 x 3 loave pans. Pour into pans. Bake at
- at 350° for 40-50 minutes. Let cool in pans for 5
- minutes before removing to wire rack to cool. Let sit overnight before slicing.
