Ingredients
- 1/2 c. low-fat Ricotta cheese
- 1 tsp. grated lemon peel
- 1 tsp. fresh lemon juice
- 1 tsp. honey
- 48 large berries
- 48 small mint sprigs
Method
- Mix all ingredients except berries and mint in blender or food processor until fluffy.
- Refrigerate and chill for 1 hour.
- Scoop out centers of berries.
- Fill with cheese mixture.
- Garnish each berry with mint sprig.
