Ingredients

  • 3 12 tablespoons butter
  • 4 tablespoons flour
  • 1 12 cups milk
  • 6 egg yolks
  • 8 egg whites
  • 1 pinch salt
  • 18 teaspoon cream of tartar
  • 1 cup grated cheese (any kind)
  • 1 teaspoon prepared mustard
  • 1 pinch nutmeg
  • 1 dash cayenne pepper

Method

  • Preheat oven to 400 degrees.
  • Melt the butter and add the flour.
  • Stir in the milk gradually.
  • Remove the pan from the heat and add the egg yolks one at a time.
  • Stir in the cheese, mustard, nutmeg and pepper.
  • Add a pinch of salt and 1/8 teaspoons cream of tarter to the egg whites and beat until stiff.
  • Fold the cheese mixture into the egg whites and transfer to the prepared souffle dish.
  • Place the souffle in the oven and immediately reduce the heat to 375 degrees.
  • Bake 25 Minutes.
