Ingredients

  • 2 c. graham cracker crumbs
  • 1 tsp. cinnamon
  • 4 eggs
  • 1/4 tsp. salt
  • 2 Tbsp. lemon juice
  • 1 c. evaporated milk
  • 2 c. sugar
  • 1/2 c. melted butter
  • 4 Tbsp. flour
  • 3/4 tsp. vanilla
  • 1/4 tsp. lemon rind
  • 1 lb. cream cheese

Method

  • Combine 2 cups crumbs, 1 cup sugar, cinnamon and melted butter and mix well.
  • Press all but 2/3 cup on bottom and sides of greased cheese cake pan.
  • Beat eggs until thick and light.
  • Add remaining sugar, flour, salt, vanilla, lemon juice and rind; beat well.
  • Combine evaporated milk and cheese.
  • Mix well; add egg mixture to that.
  • Pour into pan with crumbs and sprinkle with reserved crumbs.
  • Bake at 325° for 1 1/4 to 1 1/2 hours.
