- 2 c. graham cracker crumbs
- 1 tsp. cinnamon
- 4 eggs
- 1/4 tsp. salt
- 2 Tbsp. lemon juice
- 1 c. evaporated milk
- 2 c. sugar
- 1/2 c. melted butter
- 4 Tbsp. flour
- 3/4 tsp. vanilla
- 1/4 tsp. lemon rind
- 1 lb. cream cheese
Method
- Combine 2 cups crumbs, 1 cup sugar, cinnamon and melted butter and mix well.
- Press all but 2/3 cup on bottom and sides of greased cheese cake pan.
- Beat eggs until thick and light.
- Add remaining sugar, flour, salt, vanilla, lemon juice and rind; beat well.
- Combine evaporated milk and cheese.
- Mix well; add egg mixture to that.
- Pour into pan with crumbs and sprinkle with reserved crumbs.
- Bake at 325° for 1 1/4 to 1 1/2 hours.
