- 1 lb. sharp Cheddar cheese, shredded
- 1 lb. cream cheese
- 1/2 lb. Roquefort or Blue cheese
- 1 clove garlic, crushed
- 1 1/2 Tbsp. grated onion
- cayenne pepper to taste
- 2 tsp. Worcestershire sauce
- 2 c. finely minced parsley
- 2 c. chopped pecans
Method
- Thoroughly mix all ingredients except parsley and pecans. Combine parsley and pecans and blend half of them into cheese mixture.
- Spread remaining parsley mixture on sheet of waxed paper. Form cheese into a ball and roll it in parsley mixture until well coated.
- Chill before serving.
- May be made long before serving. Freezes beautifully.
- Approximate yield:
- 4 (11 1/2 ounce) balls.
