Ingredients

  • 1 lb. sharp Cheddar cheese, shredded
  • 1 lb. cream cheese
  • 1/2 lb. Roquefort or Blue cheese
  • 1 clove garlic, crushed
  • 1 1/2 Tbsp. grated onion
  • cayenne pepper to taste
  • 2 tsp. Worcestershire sauce
  • 2 c. finely minced parsley
  • 2 c. chopped pecans

Method

  • Thoroughly mix all ingredients except parsley and pecans. Combine parsley and pecans and blend half of them into cheese mixture.
  • Spread remaining parsley mixture on sheet of waxed paper. Form cheese into a ball and roll it in parsley mixture until well coated.
  • Chill before serving.
  • May be made long before serving. Freezes beautifully.
  • Approximate yield:
  • 4 (11 1/2 ounce) balls.
