Ingredients

  • 3 Tbsp. butter
  • vegetables (celery, carrots, cauliflower, broccoli, mushrooms, green onions, etc.)
  • 2 to 3 cans condensed cream of potato soup
  • 1 can chicken broth
  • 1 can evaporated milk or pt. half and half
  • 1/2 c. water
  • 2 Tbsp. parsley
  • hot pepper sauce
  • 2 c. Cheddar cheese
  • 3 Tbsp. sherry (optional)

Method

  • Choose your favorite vegetables and cook in butter until tender.
  • Add soups and water, parsley and a few drops of hot sauce.
  • Cover and simmer 20 minutes.
  • Stir in shredded cheese, milk and sherry.
  • Do not boil.
  • Serves 6 to 8.
