- 3 Tbsp. butter
- vegetables (celery, carrots, cauliflower, broccoli, mushrooms, green onions, etc.)
- 2 to 3 cans condensed cream of potato soup
- 1 can chicken broth
- 1 can evaporated milk or pt. half and half
- 1/2 c. water
- 2 Tbsp. parsley
- hot pepper sauce
- 2 c. Cheddar cheese
- 3 Tbsp. sherry (optional)
Method
- Choose your favorite vegetables and cook in butter until tender.
- Add soups and water, parsley and a few drops of hot sauce.
- Cover and simmer 20 minutes.
- Stir in shredded cheese, milk and sherry.
- Do not boil.
- Serves 6 to 8.
