Ingredients

  • 1 qt. chicken broth
  • 1 (10 oz.) pkg. frozen chopped broccoli
  • 2 medium carrots, grated
  • 1 small onion, chopped
  • 4 Tbsp. margarine
  • 6 Tbsp. all-purpose flour
  • 2 1/2 c. milk
  • 1 1/2 c. Cheddar cheese
  • salt and pepper to taste

Method

  • Bring broth, carrots and broccoli to a boil in saucepan. Reduce heat; simmer for 5 minutes.
  • Set aside.
  • Saute onion in margarine until done (not brown).
  • Blend in flour, salt and pepper.
  • Add milk; cook and stir until thick.
  • Add broth, carrots and broccoli; heat mixture.
  • Add cheese; heat thoroughly.
