Ingredients
- 1 qt. chicken broth
- 1 (10 oz.) pkg. frozen chopped broccoli
- 2 medium carrots, grated
- 1 small onion, chopped
- 4 Tbsp. margarine
- 6 Tbsp. all-purpose flour
- 2 1/2 c. milk
- 1 1/2 c. Cheddar cheese
- salt and pepper to taste
Method
- Bring broth, carrots and broccoli to a boil in saucepan. Reduce heat; simmer for 5 minutes.
- Set aside.
- Saute onion in margarine until done (not brown).
- Blend in flour, salt and pepper.
- Add milk; cook and stir until thick.
- Add broth, carrots and broccoli; heat mixture.
- Add cheese; heat thoroughly.
