Ingredients

  • 3 c. milk, divided
  • 1 c. yellow cornmeal
  • 1 c. shredded sharp Cheddar cheese
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 tsp. baking powder
  • 3 egg yolks, well beaten
  • 3 egg whites

Method

  • Heat oven to 325°.
  • Grease 3-quart baking dish lightly. Scald 2 cups milk in 3-quart saucepan over low heat. Add cornmeal gradually; stir until thickened.
  • Remove from heat.
  • Stir in cheese until melted.
  • Stir in 1 cup milk, salt, pepper, baking powder and egg yolks.
  • Beat egg whites until they form soft peaks and fold into mixture.
  • Pour into pan.
  • Bake 1 hour or until set. Serves 6 to 8.
