Ingredients
- 3 c. milk, divided
- 1 c. yellow cornmeal
- 1 c. shredded sharp Cheddar cheese
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 tsp. baking powder
- 3 egg yolks, well beaten
- 3 egg whites
Method
- Heat oven to 325°.
- Grease 3-quart baking dish lightly. Scald 2 cups milk in 3-quart saucepan over low heat. Add cornmeal gradually; stir until thickened.
- Remove from heat.
- Stir in cheese until melted.
- Stir in 1 cup milk, salt, pepper, baking powder and egg yolks.
- Beat egg whites until they form soft peaks and fold into mixture.
- Pour into pan.
- Bake 1 hour or until set. Serves 6 to 8.
