Ingredients
- 1 lb. broccoli with stems, chopped
- 2 Tbsp. vegetable oil
- 1 medium onion, chopped
- 4 c. chicken broth
- 1 tsp. pepper
- 2 tsp. cornstarch, dissolved in 1 Tbsp. water
- 1 c. milk
Method
- Pour oil in large pot over medium heat.
- Add onion and broccoli; lightly saute.
- Pour chicken stock in pot.
- The stock should cover broccoli and onion.
- Add pepper and bring to boil. Reduce heat, cover and simmer 20 minutes.
- Place entire contents of pot in food processor.
- (Depending on the size of your processor, you may have to process in 1/3 to 1/2 portions.) Process until smooth.
- Replace processed soup in stock pot and add dissolved cornstarch.
- Slowly add milk, stirring while adding. Simmer 10 minutes.
- Do not let boil.
- Adjust seasoning to taste.
