Ingredients

  • 1 lb. broccoli with stems, chopped
  • 2 Tbsp. vegetable oil
  • 1 medium onion, chopped
  • 4 c. chicken broth
  • 1 tsp. pepper
  • 2 tsp. cornstarch, dissolved in 1 Tbsp. water
  • 1 c. milk

Method

  • Pour oil in large pot over medium heat.
  • Add onion and broccoli; lightly saute.
  • Pour chicken stock in pot.
  • The stock should cover broccoli and onion.
  • Add pepper and bring to boil. Reduce heat, cover and simmer 20 minutes.
  • Place entire contents of pot in food processor.
  • (Depending on the size of your processor, you may have to process in 1/3 to 1/2 portions.) Process until smooth.
  • Replace processed soup in stock pot and add dissolved cornstarch.
  • Slowly add milk, stirring while adding. Simmer 10 minutes.
  • Do not let boil.
  • Adjust seasoning to taste.
