Ingredients
- 1 large head cauliflower
- 4 c. water
- salt to taste
- 2 large onions, diced
- 4 Tbsp. canola oil plus oil for pan
- fresh ground pepper to taste
- 1 egg plus 2 egg whites, beaten
- 2 Tbsp. wheat germ
- 2 Tbsp. cornflake crumbs
Method
- Wash cauliflower and separate into large florets.
- Bring water to a boil.
- Add salt and cauliflower and simmer, uncovered, 15 minutes until tender.
- Drain and mash.
- Preheat oven to 350°. Saute onions in oil.
- Cook until soft and lightly browned. Combine the onions with the cauliflower; add pepper, eggs and wheat germ.
- Place in greased 9-inch square pan.
- Sprinkle top with cornflake crumbs.
- Bake 45 minutes.

- 8 servings.
