Ingredients

  • 1 large head cauliflower
  • 4 c. water
  • salt to taste
  • 2 large onions, diced
  • 4 Tbsp. canola oil plus oil for pan
  • fresh ground pepper to taste
  • 1 egg plus 2 egg whites, beaten
  • 2 Tbsp. wheat germ
  • 2 Tbsp. cornflake crumbs

Method

  • Wash cauliflower and separate into large florets.
  • Bring water to a boil.
  • Add salt and cauliflower and simmer, uncovered, 15 minutes until tender.
  • Drain and mash.
  • Preheat oven to 350°. Saute onions in oil.
  • Cook until soft and lightly browned. Combine the onions with the cauliflower; add pepper, eggs and wheat germ.
  • Place in greased 9-inch square pan.
  • Sprinkle top with cornflake crumbs.
  • Bake 45 minutes.
