Ingredients

  • 6 whole Large Cauliflower Florets (or Enough For 2 Cups Grated Per Batch)
  • 1 Tablespoon Olive Oil
  • 1 whole Small Onion, Chopped
  • 2 cloves Garlic, Minced
  • 1/2 cups Shredded Carrots
  • 1/4 cups Peas (frozen Or Canned)
  • 1 Tablespoon Soy Sauce
  • 1 whole Egg
  • 1 Tablespoon Chopped Scallions
  • Salt And Pepper, to taste

Method

  • To grate the cauliflower, place about 5-6 florets into the bowl of a food processor and pulse about 25 times. The cauliflower will have a rice-like consistency. You'll need 2 cups of grated cauliflower for one batch of this recipe. Set aside.
  • Add the olive oil to a large pan and saute the onion and garlic on medium heat for about 10 minutes or until soft and translucent. Add the carrots and peas and continue cooking on medium heat for another couple of minutes. Add the soy sauce, raise the heat to high and add the cauliflower. Saute for a couple of minutes until the cauliflower is heated through.
  • Make a well in the center of the pan and crack in the egg. Whisk until the egg hardens and scrambles and distribute it throughout the mixture. Season with salt and pepper, top with the scallions and serve hot.
