Ingredients
- 1 c. cashews
- 1 1/2 Tbsp. arrowroot or cornstarch
- 2 c. hot water
- 1 tsp. vanilla
- 1/8 tsp. salt
Method
- Blend cashews and arrowroot with hot water, then put in a saucepan and add vanilla and salt.
- Cook until thick, stirring constantly.
- Cool and use as a topping for pie, etc.
- Fold in blended or finely chopped dried fruit such as apricots, apples, dates, etc. to make topping for waffles or French toast.
- May be used like whipped cream.
