Ingredients
- 2 Tbsp. olive oil
- 2 lb. carrots, peeled and sliced diagonally into 2-inch pieces
- 1 head garlic, cloves peeled and halved
- salt to taste
- 1 can black olives, cut in half
Method
- In large skillet, heat oil over moderately high heat.
- When the oil is hot, add carrots, stir to coat carrots with oil and reduce to moderate heat.
- Cover and braise for 20 minutes, stirring regularly.
