Ingredients

  • 1 lb. carrots
  • small jar of chopped pimentos or
  • 1/2 red bell pepper diced
  • fresh parsley
  • salad vinegar
  • honey
  • dash of salt

Method

  • Grate, grind or chop the peeled carrots,add the chopped pimentos or chopped red pepper.Add the chopped parsley. In a mug put about 1/3 to 1/2 cup of salad vinegar. Add honey one Tbsp. at a time until the mixture is sweet to your taste,be sure to stir this mixture all the time,then add a dash of salt and pour over the veggies. Let it chill in the refrigerator overnight or for several hours to blend flavors.
