Ingredients
- 3 lb. carrots, sliced and cooked tender
- 2/3 c. sugar
- 1/2 c. butter or margarine, softened
- 1/2 c. chopped pecans, toasted
- 1/4 c. milk
- 2 large eggs, lightly beaten
- 3 Tbsp. all-purpose flour
- 1 Tbsp. vanilla
- 1 tsp. grated orange rind
- 1/4 tsp. ground nutmeg
Method
- Drain carrots and mash.
- Stir in sugar and next 8 ingredients. Spoon into a lightly greased, 2-quart casserole.
- Bake at 350° for 40 minutes.
- Garnish with carrot curls or fresh parsley sprigs.
- Yields 10 to 12 servings.
