Ingredients

  • 1/2 c. boiling water
  • 1/2 c. raisins
  • 3/4 to 1 c. brown sugar
  • 1/2 c. shortening
  • 1 egg, unbeaten
  • 1 tsp. lemon extract
  • 1/2 c. finely shredded raw carrots
  • 1 1/2 c. sifted all-purpose flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt

Method

  • Pour boiling water over raisins and soak 5 minutes; drain. Combine sugar, shortening, egg and lemon extract in mixing bowl; beat well.
  • Stir in carrots and drained raisins.
  • Sift together flour, baking powder and salt; add to first mixture and blend well. Drop by teaspoonfuls onto greased baking sheet.
  • Bake at 375° for 10 to 12 minutes.
  • Makes 3 dozen.
