- 3 eggs (room temperature)
- 1/2 c. oil
- 1 tsp. vanilla
- 2 c. shredded carrots
- 2 c. coconut
- 1 c. raisins
- 1 c. chopped walnuts
- 2 c. flour
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1 tsp. cinnamon
- 1/2 tsp. salt
- 1 c. sugar
Method
- Beat eggs until light in color.
- Stir in oil and vanilla. Blend in carrots, coconut, raisins and nuts.
- Stir in flour, baking soda, baking powder, cinnamon, salt and sugar.
- Blend well. Spoon batter into 9 x 5-inch loaf pan.
- Bake at 350° for 1 hour or until golden brown.
- Remove loaf from pan.
- Cool.
