Ingredients

  • 3 eggs (room temperature)
  • 1/2 c. oil
  • 1 tsp. vanilla
  • 2 c. shredded carrots
  • 2 c. coconut
  • 1 c. raisins
  • 1 c. chopped walnuts
  • 2 c. flour
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • 1 c. sugar

Method

  • Beat eggs until light in color.
  • Stir in oil and vanilla. Blend in carrots, coconut, raisins and nuts.
  • Stir in flour, baking soda, baking powder, cinnamon, salt and sugar.
  • Blend well. Spoon batter into 9 x 5-inch loaf pan.
  • Bake at 350° for 1 hour or until golden brown.
  • Remove loaf from pan.
  • Cool.
