Ingredients
- 2 c. mashed carrots (about 12)
- 1 c. sugar
- 2 Tbsp. all-purpose flour
- 4 Tbsp. margarine
- 1 tsp. baking powder
- 1 c. milk
- 3 eggs
- 1/4 tsp. cinnamon (or to taste)
Method
- Cook and mash carrots.
- Beat in sugar, flour, margarine and baking powder, then blend in milk.
- Beat eggs until light.
- Fold into carrot mixture; blend in cinnamon.
- Turn into greased 6 x 8-inch baking dish.
- Bake at 325° for 30 minutes or until lightly brown.
