Ingredients

  • Ingredients for the cake:
  • 2 cups all-purpose flour
  • 2 tsp. baking soda
  • 1 tsp. baking powder
  • 2 tsp. cinnamon
  • 1 tsp. salt
  • 4 beaten eggs
  • 1 cup vegetable oil
  • 2 cups granulated sugar
  • 3 cups shredded carrots
  • 1/3 cup raisins
  • 1 cup chopped walnuts (save some to garnish the top of the cake)
  • Ingredients for cream-cheese icing:
  • 1 lb. cream cheese (softened, at room temperature)
  • 4 cups confectioner's sugar
  • 3 tsp. grated orange or lemon rind (your choice)
  • 1 tsp. cinnamon
  • 2 tsp. vanilla
  • 3 tsp. heavy cream

Method

  • Preparation for the cake:
  • Mix the all-purpose flour, baking soda, baking powder, cinnamon and salt together in a bowl. Add the beaten eggs, vegetable oil and sugar and blend well. Add the shredded carrots, raisins and chopped walnuts and blend well. (If the mixture seems overly thick, that's normal.)
  • Pour the mixture into two greased and floured cake pans--be liberal with both the grease and flour. Bake at 325 degrees for about an hour.
  • Preparation for cream-cheese icing:
  • Place all ingredients in a bowl and mix well.
  • Putting the cake together:
  • Slice the cakes in half to make a four-layer cake. Slice the dome of each cake and remove, which will give a flatter surface. Stack each slice of cake and apply the icing. For this particular cake, the icing can ooze out and run down the sides. Sprinkle orange or lemon rind and walnuts to garnish the top.
