Ingredients

  • 2 c. flour
  • 2 tsp. baking soda
  • 2 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1/2 tsp. salt
  • 3 eggs, beaten
  • 3/4 c. vegetable oil
  • 3/4 c. buttermilk
  • 2 c. sugar
  • 2 tsp. vanilla
  • 1 (8 oz.) can crushed pineapple, drained
  • 2 c. grated carrots
  • 1 c. flaked coconut
  • 1 c. coarsely chopped nuts (pecans and walnuts)

Method

  • Preheat oven to 350°.
  • Generously grease two 9-inch cake pans. Sift flour, soda, cinnamon, nutmeg and salt together; set aside. Combine eggs, oil, buttermilk, sugar and vanilla and mix well. Add flour mixture, pineapple, carrots, coconut and nuts. Stir well. Pour into prepared pans. Bake 55 minutes or until a toothpick inserted in the center comes out clean. Cool completely.
