Ingredients
- 2 c. sugar
- 1 1/2 c. oil
- 4 eggs
- 2 c. flour
- 2 tsp. soda
- 1 tsp. salt
- 2 tsp. cinnamon
- 3 c. grated carrots
- 1/2 c. shredded coconut
- 3/4 c. chopped nuts
Method
- Mix sugar, oil and eggs until thoroughly blended.
- Sift together flour, soda, salt and cinnamon.
- Add to first mixture and beat until smooth.
- Stir in carrots, coconut and nuts.
- Pour into greased 13 x 9 1/2-inch pan.
- Bake at 325° for 55 minutes.
