Ingredients
- 2 c. self-rising flour
- 1 tsp. soda
- 1 tsp. cinnamon
- 1 1/4 c. Wesson oil
- 2 c. sugar
- 1 tsp. salt
- 4 eggs
- 3 c. grated carrots
Method
- Sift flour, soda, cinnamon and salt together.
- Set aside. Blend sugar, oil and eggs.
- Slowly add dry mixture.
- Blend until smooth and creamy.
- Beat in carrots.
- Pour batter into two 8-inch greased and floured cake pans.
- Bake until center springs up when touched.
- Cool layers.
- Put filling between layers and frost top of cake.
