Ingredients

  • 4 eggs
  • 2 c. sugar
  • 1 1/4 c. salad oil
  • 3 c. unsifted flour
  • 2 tsp. baking powder
  • 1 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 2 tsp. cinnamon
  • 2 c. finely shredded raw carrots

Method

  • Beat eggs.
  • Add sugar gradually.
  • Beat until thick.
  • Add oil gradually and combine thoroughly.
  • Stir in dry ingredients until mixture is smooth.
  • Stir in carrots and blend well.
  • Turn into 2 well-greased loaf pans or 3 (1-pound) coffee cans, filling 2/3 full.
  • Bake in a 350° oven for 1 hour or until tester comes out clean.
  • Good hot, cold or toasted.
  • Can be doubled or frozen.
