Ingredients
- 4 eggs
- 2 c. sugar
- 1 1/4 c. salad oil
- 3 c. unsifted flour
- 2 tsp. baking powder
- 1 1/2 tsp. baking soda
- 1/2 tsp. salt
- 2 tsp. cinnamon
- 2 c. finely shredded raw carrots
Method
- Beat eggs.
- Add sugar gradually.
- Beat until thick.
- Add oil gradually and combine thoroughly.
- Stir in dry ingredients until mixture is smooth.
- Stir in carrots and blend well.
- Turn into 2 well-greased loaf pans or 3 (1-pound) coffee cans, filling 2/3 full.
- Bake in a 350° oven for 1 hour or until tester comes out clean.
- Good hot, cold or toasted.
- Can be doubled or frozen.
