- 2 c. shredded carrots
- 2 c. shredded red cabbage
- 1 1/4 c. sliced radishes
- 1/4 c. olive oil
- 1 Tbsp. apple cider vinegar
- 1/4 c. grated onion
- 1 tsp. salt
- 1/2 tsp. freshly ground pepper
- fresh parsley sprigs (garnish)
Method
- Toss carrots with cabbage and radishes.
- Chill.
- To make dressing, beat olive oil with vinegar, onion, salt and pepper. Toss salad with dressing.
- Garnish with parsley sprigs (optional). Enjoy!
