- Caribbean Rub
- 1 lb. Brown sugar
- 3 T cumin
- 1.5 T salt
- 1.5T ground black pepper
- 1.5 T ground cloves
- 1/3 C chili powder
- 1.5 T garlic powder
- 1 t white pepper
- 1 t crushed red chilis
- 1 t ground nutmeg
- 4 # pork tenderloin
- 2 C ripe fresh mango, pureed
Method
- Throughly combine all the spices. Rub the pork with the rub. Make sure that it is well coated. Smoke or grill until an internal temperature of 150° is reached. Glaze with the mango puree and heat a few more minutes. Slice and serve.
