Ingredients

  • 6 (10 inch) flour tortillas
  • 1 lb beef flank steak (cut into thin strips)
  • 3 tablespoons Worcestershire sauce
  • 14-12 teaspoon hot pepper sauce
  • 2 -3 minced garlic cloves
  • 2 medium baking potatoes, cut into 1/2 inch cubes
  • 1 lb fresh mushrooms, sliced
  • 1 medium onion, chopped
  • 34 cup shredded cheddar cheese
  • salsa

Method

  • Heat tortillas as package indicates.
  • In a medium bowl, combine steak, Worcestershire, hot pepper sauce and garlic.
  • Mix well.
  • Heat a non stick dutch oven on medium high till hot.
  • Add the meat mixture and cook and stir for 3 to 4 minutes until browned.
  • Add potatoes and onions.
  • Cook for 1 minute.
  • Reduce heat; and simmer for about 12 to 15 minutes or until potatoes are tender.
  • Spoon mixture evenly down the center of each warm tortilla.
  • Sprinkle with cheese: roll up.
  • Serve with salsa.
