Ingredients
- 1 whole Cantaloupe
- 12 whole Cherry Or Plum Tomatoes (you Want Them To Be Round)
- 1/4 cups Fresh Basil Leaves
- 2 Tablespoons Olive Oil
- 1 pinch Salt And Pepper
- 1/2 cups Feta Cheese
Method
- Cut cantaloupe in half. Scoop out seeds. Use a melon baller to scoop out all of the cantaloupe.
- Cut the tomatoes in half. If they are too big, you may need to quarter them.
- Slice basil thinly.
- Mix together cantaloupe balls, tomatoes and basil. Drizzle olive oil in and season with salt and pepper. Mix in feta.
- Refrigerate for about one hour before serving so all the ingredients meld together perfectly!
