Ingredients

  • approximately 6 to 8 average sized carrots, diced
  • 1 Tbsp. soy margarine
  • approximately 1/3 c. water
  • 2 Tbsp. honey
  • 1/2 tsp. ground cinnamon
  • 1 Tbsp. + 1 tsp. water
  • 1/4 tsp. dried whole cilantro
  • 1/2 tsp. paprika
  • 1/4 tsp. garlic powder
  • 2 tsp. soy margarine, melted
  • 1/2 tsp. ground cumin
  • 1/4 tsp. sea salt
  • dash of cayenne pepper
  • 12 half ears frozen corn-on-the-cob

Method

  • Combine first 8 ingredients in a small bowl; stir well.
  • Cook corn according to package directions.
  • Transfer corn to a serving platter and brush margarine mixture over corn.
