Ingredients

  • 1 lb Maytag Blue Cheese crumbled
  • 1 c. toasted walnut pcs
  • 1/4 c. heavy cream Salt to taste Freshly-grnd white pepper to taste
  • 2 Tbsp. extra virgin olive oil
  • 1 c. thinly-sliced onions
  • 1 c. julienned Granny Smith apples Rice wine vinegar to taste
  • 24 x French bread rounds - (2" by 1/4") toasted Fresh parsley for garnish

Method

  • In a food processor, fitted with a metal blade, combine the cheese, walnuts and cream.
  • Puree till smooth.
  • Season with salt and pepper.
  • In a small saute/fry pan, over medium heat, add in the oil.
  • When the oil is warm, add in the onions and apples.
  • Season with salt and pepper.
  • Saute/fry till caramelized, about 6 to 8 min.
  • Remove from the heat.
  • Stir in the vinegar to taste and cold completely.
  • Spread a heaping spoonful of the cheese mix over each toasted round of French bread.
  • Garnish with a small pile of the apple-onion mix and parsley.
  • This recipe yields 24 servings.
