Ingredients
- 1 lb Maytag Blue Cheese crumbled
- 1 c. toasted walnut pcs
- 1/4 c. heavy cream Salt to taste Freshly-grnd white pepper to taste
- 2 Tbsp. extra virgin olive oil
- 1 c. thinly-sliced onions
- 1 c. julienned Granny Smith apples Rice wine vinegar to taste
- 24 x French bread rounds - (2" by 1/4") toasted Fresh parsley for garnish
Method
- In a food processor, fitted with a metal blade, combine the cheese, walnuts and cream.
- Puree till smooth.
- Season with salt and pepper.
- In a small saute/fry pan, over medium heat, add in the oil.
- When the oil is warm, add in the onions and apples.
- Season with salt and pepper.
- Saute/fry till caramelized, about 6 to 8 min.
- Remove from the heat.
- Stir in the vinegar to taste and cold completely.
- Spread a heaping spoonful of the cheese mix over each toasted round of French bread.
- Garnish with a small pile of the apple-onion mix and parsley.
- This recipe yields 24 servings.
