- smoked sausage
- 2 c. onions, chopped
- 1 1/2 c. green peppers, chopped
- 1/2 c. parsley, chopped
- olive oil
- 2 (8 oz.) cans tomato sauce
- 1 (15 oz.) can tomatoes, cut up
- 2 c. red wine
- cayenne pepper
- salt
- 1 1/2 c. uncooked rice (cook according to directions)
Method
- Saute vegetables in oil until tender.
- Add tomato sauce, tomatoes and wine.
- Simmer 10 minutes.
- Add cut up sausage, cayenne pepper and salt to taste.
- Simmer 10 to 15 minutes.
- Add cooked rice.
- Mix together and serve.
